Here is an easy recipe that your kids will enjoy. You will need a Vita-Mix or other good food processor.
Ingredients:
2 cups arrowroot powder
2 cups almonds (soaked overnight and then dehydrated in a warm oven for about 8 hours or until crispy)
2 eggs 3/4 cup maple sugar or Rapadura sugar 1 tsp vanilla 1 stick butter (8 Tbsp.) Pinch of sea salt, finely ground 1/2 cup carob chips |

Directions:
Preheat oven to 325 degrees. In the Vita-Mix, grind the almonds until it is almost almond butter and is smooth. In a bowl, or a Kitchen-Aid mixer, blend butter to soften. Add sugar, mix. Add the rest of the ingredients, except the carob. After it is of a smooth consistency, stir in the chips gently. Spoon onto a cookie sheet (I prefer to use parchment paper.) Bake for 25 minutes or until they are lightly golden brown. Makes about a dozen. Be sure to double quantities if you have 4 + in your family. These also freeze well, so triple it for more!
